Blackberry Banana Pancakes

So yesterday one of Michael's good friends, Mark, came back into town pretty early, so I had Michael bring him back to our place after picking him up from the airport for a pancake breakfast! I wanted to make them from scratch instead of using Bisquick, because, come on, from scratch. I found a pretty basic recipe from All Recipes and altered it to my liking for this recipe. They came out spectacularly, especially after I let M take over the cooking as he is a better pancake cooker than I am, but I am a better recipe mixer than he is. It works out well. I really love these because they are super easy to make, yet taste quite impressive, especially if you whip up a quick drizzle with some left over berries, like I did. I didn't use exact amounts of anything for that though, so you'll have to excuse that part of the recipe. It's super easy to just throw that part together though, pretty much can't mess it up.


1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 tbsp white sugar
1 cup milk (I used unsweetened almond milk, which I feel makes them lighter)
1/4 tsp vanilla
1/4 cup 0% fat Greek yogurt (or the fatty version if you prefer)
2 ripe to overripe bananas, mashed
3 tbsp butter, melted (and a bit extra for cooking, if that's your thing)
Blackberries (used to your discretion)

about 1/2 blackberries, roughly mashed
about 1 tbsp honey
about 1/3 (or maybe more) superfine sugar


1. Sift flour into a large bowl, then mix in baking powder, salt, and sugar. (You can sift in all of these if you like, but I find it pointless with salt and sugar, and I feel I just inhale the baking powder when I try to do it to it. I only sifted my flour and my 'cakes were still bomb.) Create a well in the center.

2. Pour in milk, vanilla, yogurt, banana mash, and melted butter, and mix until combined. Next, fold in your berries! The amount you add is really up to you. Do you want pancakes chocked full or berries, or just some here and there? Totally your choice. I put in a lot.

3. Cook in a griddle (or what you have, I certainly don't have a griddle...yet) over medium heat in some butter until golden brown and cooked through. 

4. For the drizzle, things get super simple. In a small sauce pan, throw in some berries, I just went out and picked a random amount, but it was probably around a half a cup or more, just use what you have. Mash those up roughly, so they aren't fully smooshed, and then throw in some honey and superfine sugar. Heat over medium-low heat until all bubbly and good, then pour over your pancakes! There really is no science behind this, if you're worried at all, just taste it as you go and add more of whatever you need. Too much sugar? Add more honey or berries. Too little honey flavor for your liking? Give it some more! Simple, simple.
