BlackBerry Brownie Cookies

So I only managed to snap one nice photo of these for some reason, and now it's too late to take any more photos, so this one will just have to do! Sorry if it isn't enough for y'all, but I promise you they're delicious and were quite a hit with Michael's co-workers. The recipe is actually almost identical to my peanut butter fudge cookies as well, so it's quick and beyond simple. Please let me know if you give these a go!


-9 tbsp softened butter
-1 cup superfine sugar
-1 egg, lightly beaten
-1/2 tsp vanilla
-1 cup flour
-1/3 cup unsweetened cocoa powder
-1/2 tsp baking soda
-heaping 1/2 cup roughly mashed blackberries


1. Preheat your oven to 350° and line two large cookie sheets (or whatever combination of cookie sheets you have) with parchment paper.
2. Beat together sugar and butter in a large bowl until fluffy and oddly appetizing for whipped sugar and butter, then add egg and vanilla and mix until smooth. Next, sift in flour, cocoa, and baking soda and beat until mixed.
3. Add berries into the mix and whip that all together until evenly mixed, and use a spoon or fork to plop tbsp amounts of dough onto the sheets, making sure they're well spaced because they spread.
4. Bake for 15 minutes, or until cooked through, keep in mind these will be gooey either way.  Let cool and then enjoy! Or, eat as many as you can while they're still warm, which I highly suggest. <3 Also, since these have fruit in them, you probably don't want to keep them after three days.
