Clean Black Rice Pudding

I don't know how "clean" became the word for foods that are healthy and good for your body. The word "clean" personally makes me think of lemon or grapefruit scented kitchen cleaners, and not food, but whatever. I digress. Black rice pudding is something Michael introduced me to relatively recently and it immediately became one of my go-to comfort foods. It works as a breakfast as well as a dessert, and is such a versatile dish! I made the simplest version of it here for y'all, so that you can customize it as you wish (it's amazing with blueberries!). I was originally going to post two recipe variations, one where you soak it overnight and one where you don't, but it is just so much better when you soak it that I'm only posting that recipe and you can go on a hunt of your own if you want to skip the soaking. My adaption comes from this recipe, so you can refer to that if you're curious about the changes I made, or if you just want to see another example of how to make it. It's kind of a purply-red dish once it's all mixed up, which I think is really pretty. Anywho, onto the recipe!


1/2 cup black rice
1/2 cup unsweetened coconut milk + extra for soaking and topping
3/4 cups water
1 1/2 tbsp stevia
pinch of salt
1 heaping tsp honey


1. Pour 1/2 cup of black rice into a small bowl and cover with cold coconut milk (I used Silk brand). Stir until all floating pieces have sunk to the bottom (your milk will turn purple, this is normal), cover, and refrigerate over night.

2. Drain coconut milk from rice and pour rice into a small pot. Add in 3/4 cup water and 1/2 cup fresh coconut milk. Bring mixture to a boil, then simmer on low for 30 minutes, stirring occasionally. Add a splash of water if more moisture is needed near the end of cooking.

3. Add in salt, stevia, and honey, and stir until blended. Remove from heat.

4. Pour into bowls, topping with an extra splash of coconut milk and eat while it's warm! You can also add blueberries, banana, coconut ice cream, or whatever sounds yummiest to you!

Makes 2 servings.

    1. Oh well thank you! I was actually feeling a little underwhelmed with these ones, due to my lack of props, but it's nice to know that they're ok! I got some props at Goodwill with my mom the other day for my food photos, so I am super pumped to photograph whatever I make for my next Sunday Yumday post!
