Clean Quesadilla Pizza

This recipe kind of invented itself, and I love when recipes do that. The dinner meal for our clean eating meal plan was a flourless pizza that used cauliflower for the crust, which sounded amazing, but we realized the recipe needed a food processor and a microwave, neither of which we have. So, since we still wanted clean pizza, Michael whipped this up, and it was amazing. All the deliciousness of pizza with none of the guilt! It's seriously so good guys! And you get a whole pizza all to yourself! I have never in my life eaten a pizza without feeling disgusting afterwards, and this left me feeling full and happy, not full and fatty.


2 small whole wheat, low carb tortillas
1/2 cup shredded light mozzarella cheese
1 tbsp safflower oil (we also like sunflower)
1/4 of a bell pepper, sliced
1/4 cup mushrooms, sliced
1/4 cup onion, sliced
1 large clove garlic, minced
3 tbsp pizza sauce


1. Sprinkle 1/4 cup mozzarella evenly on top of one tortilla, cover with second tortilla, and spread pizza sauce over the top tortilla, leaving a little space around the edges for the "crust" if desired. Top with remaining 1/4 cup mozzarella and set aside. Preheat oven to 400º.

2. Pour oil into frying pan, and fry veggies over medium heat until tender. Michael's tip is to cook the veggies in a staggered order, beginning with the peppers until slightly tender, then adding the garlic and onion cooking until the onion is barely transparent, and finally the mushrooms until cooked.

3. Transfer veggies to top of pizza and cover with an extra dusting of cheese if desired. Cook in oven for 10 minutes, or until cheese is melted, gooey, and delicious. Let cool for a minute, then eat up!

Yum! I cannot wait to eat this amazing pizza again, because it is so good! It's also a bonus when your partner (or a friend) makes it for you. All the taste with none of the effort! Michael also added some fresh tomatoes on top of his after cooking, so remember you can mix this up with whatever veggies (or fruits) sound good to you!
